I know, use whatever size feels best; but for those of us who don't have
enough experience to know when it feels right, how long should a paddle be?

Pete's got some good ideas there. As a rule, I'd say you're more likely
to be happy going short than going long. A couple of weeks ago I was
leisurely paddling in the salt marsh in a 21.5" wide Epic, using my 218
cm paddle. I had a 2 piece 198 cm WW paddle on the deck for a spare.
Just for grins, I picked it up and paddled home with it. I did not feel
that I was changing my stroke much, still low and leisurely, and had no
problems sinking the entire blade in the water. My stroke may have
slowed down some, because the WW paddle had a much larger blade (lower
gear, in Pete's terminology). YMMV.

Certainly would depend on the width and height of the cowling on the
boat, right?

Unless you're talking about a wide open cockpit folder, not as much as
you think. WW boats are 25" wide or more and 195 cm paddles are common.
Oh, but they use a vertical stroke, right? Some do, but I can paddle my
21.5" wide sea kayak with my 197 cm WW paddle and my upper hand never
needs to go higher than my shoulder.

220 is a good starting place, I think, probably not any longer. Remember
though, that that's the length of two blades and a shaft. Shorten the
blades by 2cm and length the shaft by 4cm and you've got a whole
different 220 cm animal.
